What you need:
500gm spinach leaves (washed thoroughly)
100ml vegetable or peanut oil
1 Tablespoon Sesame Oil
1/4 cup finely shredded bamboo shoots
1 1/2 teaspoons salt
2 teaspoons sugar
50gms cashew nuts
What to do:
Heat the oil in a wok.
Toss bamboo shoots in the oil approx. 45 seconds. Keep stirring.
Add spinach and stir until wilted.
Add salt and sugar, and cook, stirring, about 1½ to 2 minutes.
Transfer to a hot platter, (do not add the liquid from the pan).
Sprinkle with cashew nuts
