Vietnamese Style Dipping Sauce

Ingredients:

1 stalk lemon grass, chopped
2 large cloves garlic
Juice of 1 lemon (1/3 cup)
2 tablespoons soy sauce
1/2 cup rice vinegar
1 dessert spoon sugar
1 chilli sliced
1 tablespoon coriander leaves
1 lime

Method:

Place first part of ingredients into a sauce pan and simmer for 8 minutes. Cool and strain. Add 1 sliced red chilli, 1 tablespoon coriander leaves, coarsely chopped and grated zest of 1 lime and serve.

Serve with prawns or other seafood
